Healthy, easy, yummy Fall eats

Acorn squash, butternut squash, sweet potatoes, pumpkin, apples, pears, beets, brussels sprouts — I am in heaven! I love Fall’s seasonal eats. And I’m not alone.

I just about jumped out of my computer chair with joy when I found the Baked Acorn Squash with Greek Yogurt, Honey & Pecans recipe — suggesting it for breakfast. I’m in!

There’s a plenitude of blogs out right now about all of the great seasonal fruits and vegetables available to us in the Fall. And there are also hundreds of  recipes coming across my Facebook feed that CLAIM to be “healthy” comfort foods, but honestly when you look are loaded with starchy, fatty, sugary carbs. Some of those claim to cut the carbs, but I’d have a hard time maintaining my weight loss if I didn’t pay attention to what’s really in those so-called “healthy” recipes.

My definition of healthy is different – to me it means low-carb, low healthy fat, low or no refined sugar and whole, natural food. I know from five years of eating this way that it can still be absolutely delicious and satisfying. So I did some research to bring a little creativity and fun to my Fall healthy cooking regime. Six years ago (or more), if you had asked me what I ate for breakfast the answer would vary greatly. One day it might be absolutely nothing but coffee; another day 2-3 egg McMuffin sandwiches at McDonald’s; and on another perhaps a Starbucks Venti Latte with a couple of slices of coffee cake and a muffin.

Truth: I didn’t do much in moderation back then and all too often I skipped breakfast and made up for it later. Can you relate?!

I plan and prepare my meals in advance for the week – usually on what I fondly call, meal prep Sunday. So I don’t often have that stare at the frig problem. But I eat a lot of lean protein — mostly chicken and turkey — and admittedly I get sick of the same old…

Pumpkin-Spice-LatteFall is my all-time favorite season for so many reasons. Not the least of which is the bounty of fabulous fall fruit and vegetables. Tis the season of pumpkin and spice…and the now infamous Pumpkin Spiced Latte.

I LOVE Pumpkin Spiced Lattes! Back when I was a “big” girl, I used to drink 1-2 per day. But, now the lattes have been replaced by Pumpkin Spice Coffee from Trader Joe’s. My new fav! Even Dunkin Donuts sells Pumpkin Spice packaged coffee. This is my “healthy” version without all the sugar. When I am really craving a latte, I make a version with unsweetened almond milk, or skim. Healthy cole slaw with Asian twist

summer salads - healthy cole slawHere’s an “easy peasy” recipe for the best Cole Slaw (sans the mayonnaise) with an Asian kick. It’s yummy and clean for those of us watching our carbs.

Thanks to my friend, personal trainer and health and wellness coach, Sandra Swami, for this one. I had this delightful salad at Sandra’s at a outdoor BBQ and LOVED it!

The best part, it’s sooooooo easy that even I can do it! I’ve made it twice myself with varying degrees of “kick.” It’s fantastic with grilled chicken, or anything on the grill. It has really nice Asian flavors.

Summer is salad time. Yum!

lobster-salad-lgI love salad anytime of year, but especially in the summer. And that was not always the case. When I was 381 pounds and living on a diet of fast and processed food, I had myself convinced I didn’t like salad. I almost never ate it.

But once I started eating and enjoying salad on a daily basis, I started to crave it. And my creative side is always looking for a new twist. So when I read this blog today: “6 Summer Salads You’ll Actually Crave,” I had to share it here.

My new favorite salad since I’ve been spending lots of time on the East Coast: Lobster salad. It’s healthy when prepared right, and I’ve found I can experiment by trying lobster rolls, sans the bun/roll. The lobster salad tastes even better to me.

Many of the recipes in this blog can be extremely healthy and clean with a few tweaks. If you’re not sure what to tweak, look for the added sugars and fat, often found in the dressings. This mint cucumber salad is on my party menu for this weekend. Yum!

Here’s to a healthy, happy Labor Day!

color me radHi peeps. Wishing you all a happy and healthy Labor Day weekend. Make it a good one. And a long weekend of YOU in the center of your equation.

Some think this holiday marks the end of summer, but I’m determined to celebrate summer a bit longer. I’m off to Madison, WI to hang with one of my favorite friends in the world and we’ve been known to raise a little hell in our time together. Can’t wait! We’re making it a fun and healthy weekend by doing the Color me Rad 5K in Madison tomorrow – another first for me. And, my intent is to stay on my nutritional plan with some healthy and fun grillin and summer salads (plus a few libations, of course!). Read more
