Yep. A happy, healthy holiday is possible!

Whatever that means to you…

gratitudeIt’s Thanksgiving week, kicking off the season of gratitude and good cheer! With that comes a host of blog posts from health gurus with healthy holiday tips. So I figured, why not join the crowd?! Though my tips are probably quit different than most.

What does it mean to have a “healthy” holiday? I look at “health” holistically, considering mind, body and spirit. And I believe now (not always) that having a healthy and happy holiday — however you define it — starts with YOU. Read more

Operation reboot!

7 Tips for a successful start, restart, or total reboot

lori-operationreboot-2015Nearly four weeks ago I boldly blogged about my epiphany on the mountain and #operationreboot. It’s time for a reality check.

The old me wishes I could report that I’ve been perfect — 100% on plan with no slip ups. The new me laughs at that notion and is happy to report that Ive had a good run, with ups and downs along the way. I’m not perfect. But I’m authentically me. I love and celebrate that.

Yep, I’d rather be perfectly imperfect, perfectly authentic and 100% all in! That’s my new definition of success. And it’s working. I’m kinder and gentler with myself without hiding behind the excuses. I am able to take stock of major progress despite a lot of stress, travel and unexpected emotional challenges. I feel great — strong, capable, and on fire. There’s no question, that I’ll reach my goals. Because I know I can! One day at a time.

So here’s the report from the trenches. Read more

Meal prep. Works for me!

7 tips for meal prep to keep you on track. A key to the successful Reboot!

saladassemblyIf you know me personally or have been invited to one of my dinner parties, you know that I am a lot of wonderful things but a great cook is NOT one of them! I once had a dinner party and bought the whole meal.

I’m not imaginative or intuitive about what to put together when preparing meals, probably because I haven’t had a ton of practice. I lived most of my adult life on fast and processed food so I didn’t spend that much time in the kitchen — unless it was starring at the frig wondering what to eat next! And, I don’t particularly enjoy cooking unless I have a partner in the kitchen helping.

That said, I lost 200+ lbs and have maintained a healthy lifestyle for 3.5 years by getting really good at meal planning and preparation. It’s one of the keys to success for me and something a lot of people struggle with.

It’s also been the key to my successful #operationreboot this past week. Read more

Pumpkin spice & everything nice

Plenty of happy, healthy fall eats

Pumpkin-Spice-LatteFall is my all-time favorite season for so many reasons. Not the least of which is the bounty of fabulous fall fruit and vegetables. Tis the season of pumpkin and spice…and the now infamous Pumpkin Spiced Latte.

I LOVE Pumpkin Spiced Lattes! Back when I was a “big” girl, I used to drink 1-2 per day. But, now the lattes have been replaced by Pumpkin Spice Coffee from Trader Joe’s. My new fav! Even Dunkin Donuts sells Pumpkin Spice packaged coffee. This is my “healthy” version without all the sugar. When I am really craving a latte, I make a version with unsweetened almond milk, or skim. I don’t eat “fast food.” Or, do I?

Exploring healthy options at Subway with the help of Jared & NBC’s The Biggest Loser

2015-05-22 09.18.52Those of you that know my story, or have heard me speak publicly, know that I no longer eat “fast food.” It was one of the very first things to go (along with the diet coke) back in November 2010 when I officially started my transformation journey. I haven’t eaten fast food in five years.

Well, okay, until this past weekend.

This past January, when I shared my at-home transformation story on NBC’s The Biggest Loser, we were surprised by Jared, the Subway guy, who was in the audience and “gifted” us a year’s supply of Subway. Read more

Podcast: Lori Schaefer turns 48, loses 211 lbs

014-Lori-SchaeferAfter I shared the short version of my transformation story on NBC’s The Biggest Loser, I had the privilege of sharing a much longer version with Brett Fairell who started the podcast and website titled: “Your Way Weight Loss.”

I met Brett at the Biggest Loser after-party where we swapped transformation stories. Brett lost 173 lbs and his way was the Paleo diet. Like me, Brett is paying it forward, and asked me to be interviewed for his podcast. Here is my full interview titled: Lori Schaefer Turns 48, loses 211 lbs. Read more

You are what you eat. Uh oh!

March is National Nutrition Month. What kind of fuel are you putting in your body?

fruit for breakfastDid you know that fruit is a carb? How about that a chicken breast & a doughnut have about the same calories? But, boy, oh boy, do they get processed differently in your body.

In celebration of March being National Nutrition Month, I thought it would be fun to start the week off with a blog about nutrition.

When I started my transformational weight loss journey, I didn’t know that fruit is a natural carbohydrate. And I was sketchy on details about good and bad carbs all together. Read more

How I lost 200+ lbs & reignited my life

The key to success might be what you THINK!

Lori Schaefer with Dolvett Quince on The Biggest LoserSince I shared my story on NBC’s The Biggest Loser last week, I’ve had the privilege to connect with so many amazing people. Thanks to those who’ve shared their personal stories of struggle, challenge and heartache — as well as successes and triumphs — along the path to weight loss and better health and happiness. I am honored that you entrusted me with your personal stories and your questions.

It’s probably no surprise that the most frequently asked question I get is: “How did you do it?” Or, “What ONE thing was the key to your success?” Immediately followed by questions like: “What diet did you follow? Can you tell me exactly what to eat and how much to exercise? …” Read more
